Tennessee Lemon Chess Pie

Ingredients

4 eggs, lightly beaten
2 cups sugar
1 tablespoon all-purpose flour
1 tablespoon cornmeal
1/4 cup milk
1/4 cup butter or margarine, melted
2 teaspoons grated lemon rind
1/4 cup lemon juice
1 unbaked (9-inch) pastry shell

Preparation

Combine eggs and sugar; beat well. Add flour and cornmeal, mixing until well blended. Add milk, butter, lemon rind, and juice; beat well. Pour filling into pastry shell. Bake at 375° for 55 minutes or until a knife inserted in center comes out clean. Cool before slicing.
