  • 3 tablespoons olive oil
  • 1 tablespoon grated fresh orange rind
  • 2 tablespoons fresh orange juice
  • 1 tablespoon rice vinegar
  • 2 teaspoons chopped fresh flat-leaf parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 cups torn Bibb lettuce (2 heads)
  • 1 cup navel orange sections
  • 1/3 cup thinly sliced red onion
  • 1/4 cup slivered almonds, toasted
  • 2 cooked bacon slices, crumbled


  1. Combine olive oil and next 6 ingredients, stirring well with a whisk.
  2. . Combine lettuce, orange sections, and onion in a large bowl. Add dressing; toss gently. Top with almonds and bacon. Serve immediately.
