Ingredients
- 3 tablespoons olive oil
- 1 tablespoon grated fresh orange rind
- 2 tablespoons fresh orange juice
- 1 tablespoon rice vinegar
- 2 teaspoons chopped fresh flat-leaf parsley
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 8 cups torn Bibb lettuce (2 heads)
- 1 cup navel orange sections
- 1/3 cup thinly sliced red onion
- 1/4 cup slivered almonds, toasted
- 2 cooked bacon slices, crumbled
Preparation
- Combine olive oil and next 6 ingredients, stirring well with a whisk.
- . Combine lettuce, orange sections, and onion in a large bowl. Add dressing; toss gently. Top with almonds and bacon. Serve immediately.
