Ingredients

3 tablespoons olive oil
1 tablespoon grated fresh orange rind
2 tablespoons fresh orange juice
1 tablespoon rice vinegar
2 teaspoons chopped fresh flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 cups torn Bibb lettuce (2 heads)
1 cup navel orange sections
1/3 cup thinly sliced red onion
1/4 cup slivered almonds, toasted
2 cooked bacon slices, crumbled

Preparation

Combine olive oil and next 6 ingredients, stirring well with a whisk.

. Combine lettuce, orange sections, and onion in a large bowl. Add dressing; toss gently. Top with almonds and bacon. Serve immediately.
