Really tasty salad! I reduced the amount of salt by half. I think the green olives are pretty salty and you don't need to add a lot more. I rinsed my chopped onions to lessen their intensity and it worked well. This is a great summer salad to bring to a picnic. We will definitely make this again.

When my husband finishes a serving of salad--and one that consists of an unfamiliar grain at that--I know it's a winner!

Made this salad for dinner last night, and my husband and I loved it! Delicious, great blend of flavors. Ate leftovers for lunch today, and am making it again right now to have for lunch for the rest of the week. Yum!

This dish is delicious! I made it as a side dish last night, but I couldn't stop eating it so it ended up as my dinner. I highly recommend this! I did have to add more water after it soaked for 45 minutes. Next time I make it I will increase the boiling water to 1 1/2 cups.
