Tarragon Vinaigrette

Yield 1 3/4 cups

Ingredients

  • 1/2 cup tarragon vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup vegetable oil
  • 2 tablespoons fresh tarragon, chopped

How to Make It

  1. Process first 5 ingredients in a blender until smooth, stopping to scrape down sides. Turn blender on high, and add oil in a slow, steady stream. Stir in tarragon.
