2 tablespoons chopped fresh parsley
3 tablespoons light mayonnaise
1 tablespoon fresh lime juice
2 teaspoons olive oil
1/2 teaspoon dried tarragon
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
4 (6-ounce) red snapper fillets
Cooking spray


1. Preheat broiler.

2. Combine first 8 ingredients in a small bowl; set aside.

3. Place fish on a broiler pan coated with cooking spray; broil 5 minutes. Turn fish; spread mayonnaise mixture over fish. Broil 5 minutes or until fish flakes easily when tested with a fork.
