Tangy Green Beans with Pimiento

Yield 6 servings

Ingredients

  • 1 1/2 pounds green beans, trimmed
  • 3 bacon slices
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 (2-ounce) jar diced pimiento, drained
  • 1/4 cup red wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin seeds

How to Make It

  1. Cook green beans in boiling water to cover 4 to 5 minutes. Drain and plunge beans into ice water to stop the cooking process; drain and set aside.

  2. Cook bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reserving 2 tablespoons drippings in skillet. Crumble bacon, and set aside.

  3. Sauté onion and garlic in hot bacon drippings over medium-high heat until tender. Stir in pimiento and next 5 ingredients. Stir in green beans; reduce heat, cover, and simmer 5 minutes. Sprinkle with bacon.
