Tahitian Coffee

Melted ice cream forms a sweet, foamy top layer for this drink.

  • Yield: 4 servings (serving size: 3/4 cup coffee and 2 tablespoons ice cream)

Ingredients

  • 2 3/4 cups hot strong brewed coffee
  • 1/4 cup dark rum
  • 1 tablespoon sugar
  • 1/2 cup vanilla low-fat ice cream
  • 4 (3-inch) cinnamon sticks (optional)

Preparation

Combine the first 3 ingredients in a pitcher, stirring until sugar dissolves. Pour into mugs, and top with ice cream. Garnish with cinnamon sticks, if desired.
