This was a fun holiday drink to serve in place of the expected mulled cider or cocoa. The bitter coffee and rum were a bit too strong for me with only 2 tablespoons ice cream per serving - I'd use 1/4 cup ice cream, or use whipped cream instead. Definitely add the cinnamon sticks; the longer they steep in the coffee mixture, the yummier this is.

Yield: 4 servings (serving size: 3/4 cup coffee and 2 tablespoons ice cream)

Ingredients
- 2 3/4 cups hot strong brewed coffee
- 1/4 cup dark rum
- 1 tablespoon sugar
- 1/2 cup vanilla low-fat ice cream
- 4 (3-inch) cinnamon sticks (optional)
Preparation
- Combine the first 3 ingredients in a pitcher, stirring until sugar dissolves. Pour into mugs, and top with ice cream. Garnish with cinnamon sticks, if desired.
