- 1 cup(s) couscous
- 1 1/4 cup(s) water
- 2 tomatoes chopped
- 1 lemons juiced
- 1 bunch(es) parsley finely chopped
- 1 bunch(es) mint finely chopped
- 2 green onions finely chopped
- Cook coucous as directed. Add remaining ingredients. Toss. Add olive oil salt/pepper and toss till mixed well. Refrigerate a few hours.
