Swordfish Skewers with Cilantro-Mint Pesto

    I made this dish according to the recipe and grilled it on the stovetop. The pesto was an essential part of this recipe and brought out the citrusy flavor of the marinated swordfish. I especially enjoyed the minty taste of the pesto blended with the orange and lime. I served it with white rice and a lettuce salad with Buttermilk Herb Dressing (from the CL website). A perfect light summer meal that would also be a good entree for guests. I will definitely make this recipe again and I would like to try the pesto with other dishes. The pesto is a little runnier than other pestos I have made but I appreciated the lower fat content of this mixture. I am on the Weight Watcher's program and the Swordfish was a 4 point entree. I found it to be very satisfying and a good fit with my weight loss plan.
