Swiss Cheese Sauce
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 cup (4 ounces) shredded Swiss cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Melt butter in a heavy saucepan over low heat; whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in 2 cups milk; cook over medium heat, whisking constantly until mixture is thickened and bubbly.
- Add shredded Swiss cheese, salt, and pepper, stirring until cheese melts.
