Swiss Cheese Sauce

Ingredients

2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1 cup (4 ounces) shredded Swiss cheese
1/2 teaspoon salt
1/4 teaspoon pepper

Preparation

Melt butter in a heavy saucepan over low heat; whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in 2 cups milk; cook over medium heat, whisking constantly until mixture is thickened and bubbly.

Add shredded Swiss cheese, salt, and pepper, stirring until cheese melts.
