Swiss Chard and Sausage Frittata

    I made this tonight and my family loved it - even my picky kids! I used chicken & apple sausages that I had on hand and left out the mushrooms, only because I didn't have any. It was quick, easy, and yummy. Perfect for a quick family meal. I'll make this one again and try some ingredient variations.

    Used this recipe as it was written. This is excellent. my Italian mom use to make Frittata many years ago and this was very close to hers. The family loved it and I wouldn't change anything at all. This is a real winner!! I will use this recipe for family gatherings as well. The only question I had was what is a bunch of swiss chard? I used a cup full and would use a little more next time.

    Tasty but a bit bland. It either needs more herbs or spices or more cheese in the egg mixture. It *really* sucks up chard, though, so don't be afraid to use a whole bunch from the store. It cooks down a lot. I used rainbow chard and hot italian turkey sausage, and subbed a poblano pepper for the mushrooms. I chopped up the chard stems and threw them in too and that was fine. Because it tasted bland, we added Cholula hot sauce to serve. I think using table salt instead of kosher salt might help too by helping it dissolve and get distributed easier. Good base recipe, but next time I will either add herbes de provence or Italian seasoning or double the cheese.
