  • 3 garlic cloves, minced
  • 1/4 cup tequila
  • 1 teaspoon grated lime rind
  • 1/4 cup fresh lime juice
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon salt
  • 1/8 to 1/4 teaspoon ground red pepper
  • Cooking spray
  • 4 (4-ounce) skinless, boneless chicken breast halves


  1. Combine first 7 ingredients in a bowl; stir well. Set aside.
  2. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken; cook 4 minutes on each side or until browned.
  3. Add tequila mixture; bring to a boil. Cover, reduce heat, and simmer 8 minutes. Uncover, turn chicken, and simmer 2 minutes or until chicken is done and sauce is thickened.
