Peel 1 watermelon radish (about 12 oz.). If radish is wider than 3 inches, cut in half lengthwise. Slice crosswise as thinly as possible. Mix with 1/3 cup seasoned rice vinegar. Cover and chill at least 10 minutes or up to 1 hour, stirring occasionally. Sprinkle with 1 teaspoon black sesame seeds, if desired.
Interesting...I had never tried watermelon radish before but needed a simple side for steak and fingerling potatoes...The presentation is impressive, given the appearance of "miniature watermelon" slices complete with black seeds. One caveat for those who enjoy the flavor of radishes is that this is almost completely masked by the vinegar; but this didn't matter to me. I will likely seek out more creative uses next time but this was a nice introduction to an unusual, striking vegetable.
