On cold days when you don't want to brave the outdoor grill, broil these lamb chops in the oven instead.
3/4 teaspoon ground cinnamon
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon ground red pepper
8 (4-ounce) lamb loin chops, trimmed (about 1 inch thick)
Lime wedges (optional)
How to Make It
Combine first 6 ingredients in a small bowl. Rub mixture evenly over lamb. Place lamb on a grill rack coated with cooking spray. Grill 4 to 5 minutes on each side or until desired degree of doneness. Serve with lime wedges, if desired.
