Sweet Potato Wedges

Move over French fries! Sweet Potato Wedges are the healthier pick to accompany your favorite burger. They're simple to prepare, and bake in about 20 minutes.

  • Yield: Serves 4 (serving size: 3 sweet potato wedges)

Ingredients

  • 2 medium sweet potatoes (about 1 1/2 pounds)
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground red pepper

Preparation

Preheat oven to 450°. Peel sweet potatoes; cut in half lengthwise. Cut each half lengthwise into thirds. Place potatoes in a bowl; add olive oil, kosher salt, and ground red pepper, tossing to coat. Arrange potato wedges on a baking sheet coated with cooking spray; bake at 450° for 10 minutes. Turn potatoes; bake 10 to 12 minutes or until tender.
