Sweet Potato Waffles
Yield: ten 4-inch waffles
- 1 1/4 cups milk
- 1 cup cooked, mashed sweet potatoes
- 1/4 cup butter or margarine, melted
- 2 eggs, lightly beaten
- 2 cups all-purpose flour
- 3 tablespoons sugar
- Combine milk, sweet potatoes, butter, and eggs in a medium bowl; mix well. Combine flour and sugar; add to milk mixture, stirring well.
- Spoon batter into a preheated, lightly oiled waffle iron, following manufacturer's directions. Cook 5 minutes or until brown and crisp. Repeat procedure with remaining batter.
