Sweet Potato Waffles

Yield ten 4-inch waffles


  • 1 1/4 cups milk
  • 1 cup cooked, mashed sweet potatoes
  • 1/4 cup butter or margarine, melted
  • 2 eggs, lightly beaten
  • 2 cups all-purpose flour
  • 3 tablespoons sugar

How to Make It

  1. Combine milk, sweet potatoes, butter, and eggs in a medium bowl; mix well. Combine flour and sugar; add to milk mixture, stirring well.

  2. Spoon batter into a preheated, lightly oiled waffle iron, following manufacturer's directions. Cook 5 minutes or until brown and crisp. Repeat procedure with remaining batter.
