Ingredients

  • 2 pounds sweet potatoes, cut into 1/4-inch-thick x 3/4-inch-wide strips
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon salt
  • Cooking spray

Preparation

  1. 1. Preheat oven to 450°.
  2. 2. Combine first 4 ingredients in a large bowl; toss well. Arrange potatoes in a single layer on a large baking sheet coated with cooking spray. Bake at 450° for 18 minutes or until lightly browned.
