Ingredients

  • 3 cups ap flour
  • 2 teaspoon(s) baking powder
  • 2 ttsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 sticks unsalted butter softened
  • 1 1/2 cup(s) granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 tsp vanilla
  • 2 cups mashed sweet potatoes
  • 4 large eggs at room temp
  • 3/4 cup pecans chopped

Preparation

  1. PREHEAT oven to 325. Grease two 9 " loaf pans. Sift next 6 ingredients. In a large bowl, using an electric mixer, cream butter, sugar,and vanilla until light and fluffy. Blend in sweet potatoes, then eggs, one at a time. With the mixer on low, add flour mix in thirds, combine just enough to blend
  2. Spoon batter evenly into pans. Sprinkle with pecans. Bake 70-80 min. Cool on wire for 15 min. Remove from pan and cool completely on wire rack
