Serve this pie chilled with low-fat ice cream fora cooling dessert.
1 (14 1/2-ounce) can mashed sweet potatoes
3/4 cup milk
3/4 cup firmly packed brown sugar
2 large eggs
1 tablespoon butter or margarine, melted
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 unbaked (9-inch) pastry shell
How to Make It
Combine first 7 ingredients in container of an electric blender; process until smooth, stopping once to scrape down sides. Pour into pastry shell.
Bake at 400° for 10 minutes. Reduce heat to 350°, and bake 35 minutes or until a knife inserted in center comes out clean, shielding edges with aluminum foil after 20 minutes to prevent excessive browning.
