I used this as a jumping-off recipe for my own sweet potato side dish. Followed the directions, added brown sugar, then popped it into a baking dish and topped with mini marshmallows. It was delicious and I can't wait to have the leftovers for dinner tonight!

Ingredients
- 3 large sweet potatoes, peeled and cut into 1-inch cubes (about 4 1/2 cups)
- 2 tablespoons unsalted butter
- 1/4 cup whole milk
Preparation
- Place the sweet potatoes in a medium saucepan and add enough salted water to cover. Heat to boiling, cover, and cook for 10 minutes or until soft. Drain the potatoes and transfer them back to the saucepan. Add the butter and milk and mash.
