Sweet Potato Mallow
A rich and creamy sweet potato casserole covered with miniature marshmallows. Kids love it, and so do the adults!

- 6 med. sweet potatoes (cooked) or 2 x 16 oz. cans sweet potatoes
- 1 cup sour cream
- 2 egg yolks
- 1 tsp salt
- 1/2 tsp nutmeg
- 2 C mini marshmallows
- Preheat oven to 350.
- Combine in mixing bowl: sweet potatoes, sour cream, egg yolks, salt and nutmeg. Beat on med. until smooth. Pour into buttered 2 qt. bowl, top with marshmallows. Bake 30 min. or until marshmallows are puffed and lightly browned.
