Ingredients

  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 2 sweet potatoes, peeled and chopped
  • 1/2 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper

Preparation

  1. Melt butter with olive oil in a skillet over medium-high heat. Add sweet potatoes; cook, stirring occasionally, 5 minutes. Add bell pepper, onion, kosher salt, and freshly ground pepper. Reduce heat to medium; cover and cook, stirring occasionally, 8 to 10 minutes or until potatoes are tender.
