Sweet Potato-Granny Smith Apple Salad

Serve this salad warm out of the oven or at room temperature.

  • Yield: 14 servings (serving size: 1/2 cup)

Ingredients

  • 5 cups (1/2-inch) cubed peeled sweet potato (about 1 1/2 pounds)
  • 1 cup coarsely chopped onion
  • 1/4 cup packed brown sugar
  • 1/4 cup fresh orange juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups (1-inch) cubed Granny Smith apple (about 1 1/4 pounds)

Preparation

Preheat oven to 350°.

Combine potato and onion in a 13 x 9-inch baking dish. Combine sugar and next 5 ingredients (sugar through pepper) in a small bowl. Pour over potato mixture; toss well. Cover and bake at 350° for 30 minutes; stir occasionally. Stir in apple; bake 15 minutes or until apple is tender. Uncover and bake an additional 5 minutes.
