Sweet Potato Corn Pones

Yield about 3 dozen


  • 1 teaspoon baking soda
  • 1 1/4 cups buttermilk
  • 2 cups cornmeal
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup cooked, mashed sweet potatoes
  • 1 egg, beaten
  • 2 tablespoons bacon drippings

How to Make It

  1. Dissolve soda in buttermilk; stir well. Combine cornmeal, sugar, and salt; add buttermilk mixture, sweet potato, egg, and drippings, mixing well.

  2. Shape into balls, using 1 tablespoon batter per ball. Place on greased griddle, and lightly press into circles with the back of a fork. Bake at 400° for 20 minutes.
