Sweet Potato and Chorizo Tacos

    We loved these tacos, however I used soy chorizo from Trader Joe's. I also cooked the yam the day ahead and refrigerated it over night. Then chopped it up and cooked it with the onion. Add sour cream or yogurt to soften the strong chorizo taste. This is a delicious vegetarian version and a simple quick meal.

    These tacos were fantastic! Instead of chorizo, I used Soyrizo. I did add some diced serrano chiles and cilantro to the romaine and lime. My whole family loved them. Such a great idea and a nice break from meats.

    I wasn't too crazy over the taste, but someone else may think differently. I would suggest the you chop the chorizo by hand before adding to the mix b/c the spoon doesn't break it up as easily as the instructions suggest.

    I thought these tacos were delicious. I made it exactly as the recipe says and was very pleased. My 5-year old ate them as well. I will definitely make these again and again.
