Sweet potato casserole

6-15oz cans=7c 1 bag frozen Oreida sweet potatoes=3c mashed 5 large sweet potatoes=7c(Bake on cookie sheet at 400 degrees for 1 hour)

  • Sweet potato mixture:
  • 3c mashed sweet potatoes
  • 1c sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 eggs, beaten
  • 1/3 stick butter melted
  • 1/2c milk (don't double)
  • Topping mixture:
  • 1c light brown sugar
  • 1/3c flour
  • 1c chopped pecans
  • 1/3 stick butter melted


  1. Combine topping mixture in a bowl and set aside.
  2. Combine sweet potato mixture into a bowl in the order listed.
  3. Pour sweet potato mixture in greased baking dish.
  4. Sprinkle topping mixture over sweet potato mixture.
  5. Bake for 30 minutes at 350. Allow to set at least 30 minutes before serving.
