This soup is quick, easy, healthy, and delicious. I had all the ingredients on hand and I was pleasantly surprised with how tasty the result was. And the soup is super healthy too. I added some cooked frozen peas after I blended the soup. I only used maybe two tablespoons of ginger (about 1 inch or so?) and was perfect for me.

I made this today. Added croutons and sprinkled with parmesan cheese and parsley for color. Highly recommend as this was super fast and easy!
