Bring water to a boil in a large saucepan. Add remaining ingredients. Cover, reduce heat, and simmer 30 minutes. Place half of sweet potato mixture in a blender; process until smooth. Return pureed mixture to saucepan; cook over medium heat until thoroughly heated.
This soup is quick, easy, healthy, and delicious. I had all the ingredients on hand and I was pleasantly surprised with how tasty the result was. And the soup is super healthy too. I added some cooked frozen peas after I blended the soup. I only used maybe two tablespoons of ginger (about 1 inch or so?) and was perfect for me.
