Sweet Pepper-Tomato Topping

This recipe is best when freshly made; however, you can cover and chill the mixture (without basil) up to two hours. Just know that the texture of the tomatoes will soften.

  • Yield: Makes about 3 cups

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon coarsely ground pepper
  • 2 none large tomatoes, seeded and chopped
  • 1 none yellow bell pepper, chopped
  • 1 none green bell pepper, chopped
  • 4 none green onions, sliced
  • 1/2 cup pitted Spanish olives, quartered
  • 1/2 cup golden raisins, coarsely chopped
  • 1/4 cup firmly packed fresh basil leaves, chopped

Preparation

1. Stir together first 4 ingredients in a large bowl. Add tomatoes and next 5 ingredients, tossing gently to combine. Let stand 15 minutes. Gently stir in basil just before serving.
