This recipe is best when freshly made; however, you can cover and chill the mixture (without basil) up to two hours. Just know that the texture of the tomatoes will soften.
Makes about 3 cups
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
2 large tomatoes, seeded and chopped
1 yellow bell pepper, chopped
1 green bell pepper, chopped
4 green onions, sliced
1/2 cup pitted Spanish olives, quartered
1/2 cup golden raisins, coarsely chopped
1/4 cup firmly packed fresh basil leaves, chopped
1. Stir together first 4 ingredients in a large bowl. Add tomatoes and next 5 ingredients, tossing gently to combine. Let stand 15 minutes. Gently stir in basil just before serving.
