Sweet Peach Sauce

Cooking Light JUNE 2001

  • Yield: 3 cups (serving size: 1 tablespoon)

Ingredients

  • 1 tablespoon olive oil
  • 2 cups sliced red onion
  • 3 cups chopped peeled peaches
  • 2 cups chopped tomato
  • 2 tablespoons minced peeled fresh ginger
  • 1/2 cup cider vinegar
  • 1/2 cup fresh orange juice (about 1 orange)
  • 1/3 cup packed brown sugar
  • 1 teaspoon ground allspice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Preparation

Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion, and sauté for 10 minutes, stirring frequently. Add peaches, tomato, and ginger, and cook for 2 minutes. Add the vinegar and remaining ingredients, and bring to a boil. Reduce heat, and simmer for 20 minutes. Place the peach mixture in a food processor, and process until smooth.
