Sweet Onion, Tomato, and Corn Salad with Basil

Yield 4 servings
This seasonal salad only takes a few minutes to prepare. You can use dark balsamic vinegar in place of the white, though the salad wont't look as pretty.

Ingredients

  • 1 tablespoon chopped fresh basil
  • 2 tablespoons white balsamic vinegar
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 cup basil leaves
  • 2 large tomatoes, thinly sliced
  • 1/2 cup thinly sliced Vidalia or sweet onion
  • 1 cup fresh white corn kernels (about 2 ears)
