Preheat oven to 250 F. Spread pecans on a cookie sheet and bake for 10 - 15 minutes, until aromatic. Remove from oven and pour into a large bowl. In a separate bowl, mix together sugar, salt and curry. Set aside. Separate egg white from yolk; add 1 tsp water to egg white in a small mixing bowl. Whip together until frothy. Spray 2 cookie sheets with PAM. Pour egg white mixture over pecans; stir well to mix, then immediately add curry, sugar and salt mixture, continuing to stir to make sure pecans are evenly coated in mixture. Pour pecans onto cookie sheets and spread out in a single layer. Bake for one hour at 250 F.
