I used half of the butter (if that) and subbed a little olive oil. I also omitted the taco seasoning (only because I didn't have any and I didn't want the added sodium it would provide) and used frozen organic sweet corn (from Trader Joes). While I sauteed the zucchini and onion I used a dried spinach & herb mix (I bought at a Tastefully Simple party) which has spinach flakes, onion, minced green onions, dill, and garlic in it. It was delicious! This is my new favorite side, and my new side to bring to any BBQ this summer. It's good warm and cold, as we ate the leftovers for days afterwards straight from the 'fridge.

My family enjoyed this side dish. I made it as written the first time and it was too greasy. Now make it with half the butter. A nice way to use fresh veggies from the farmers market.

One of the best, fresh-tasting side dishes you can make in a hurry and is very attractive. Frozen corn works great!

Made a couple of changes: used 1 tbsp evoo instead of butter and Mrs. Dash original seasoning. Was so yummy and will make again for sure.

Excellent exept too much butter. I recomend using half the amount in evoo and other in butter or just cut way down on butter to decrease soggy greasy feel.

Excellent. We used corn on the cob and grilled it to a slight brown color.
