Preheat oven to 400°F and grease a 12-cup muffin tin. Mix 1/2 cup ketchup, brown sugar and vinegar in a small bowl.
In a large bowl, combine ground beef, egg, onion, bread crumbs and remaining 1/2 cup ketchup; season with salt and pepper. Combine ingredients well.
Place 2 1/2 tsp. ketchup mixture in bottoms of prepared muffin wells. Form meat mixture into 12 equal balls and place in muffin tin, pressing down to smooth top of meat.
Cook meat loaves until no longer pink and juices bubble around edges, about 20 minutes. (Center of loaves should reach 160°F on a meat thermometer.) Remove from oven and let sit in pan for 5 minutes before carefully removing. Serve with mashed potatoes and peas and carrots, if desired.
We LOVE these! I've made them a couple of times now and will be making them this coming week as requested by our youngest. The first time I made them I accidentally mixed ALL of the ketchup instead of half, so I ended up using half the mixture in the meat and half in the pan and it came out awesome! The second time I mixed it that way on purpose and replaced half of the bread crumbs with quick oats, healthier. This time I may use only the oats and completely omit the crumbs. We love meatloaf so I'm always trying to make it a little healthier while keeping it delish.

My husband and I really enjoyed this even with halving the recipe. It was super easy to put together and perfect for a weeknight meal. We will definitely make again. I'll second bobbo605: put a cookie sheet under the tin. I cooked ours in a 6-muffin tin and cooked in our toaster oven (cooked thoroughly in 20 minutes) but the greasy runoff will be a pain to clean!
Tastes great and easy and quick to make! My hubby really liked it. I bet kids would too! Next time I'll brown the onions separately before adding them to the meat mixture. The onions were definitely crunchy inside.
Great recipe! I add a bit more bread (instead of crumbs) that I tear up very small- it's just a personal preference. It takes a bit longer in the oven to cook as well. But when it comes out, it's delicious! Me and my husband have made this over and over, and has earned a place in our go to recipe book. Wonderful served with red mashed potatoes!
great flavor! my husband and our guests raved about the meat loaves. cooked it according to directions - maybe a bit longer in the oven - and thought it was great. combined with mashed potatoes and peas.
