When I was asked to provide a meal for a sick friend I made this soup. Six months later she was still saying how good it was and hinted that that she wouldn't mind getting another batch. I make this regularly now and it is always a delicious. So quick (especially when my hubby cuts up the veggies).
This recipe was quick, easy and delicious. My 2 year old loved it as well as my husband. I will definitely make it again. I doubled the recipe because I did not make any sides as it suggested. Also, I used part of a rotisserie chicken because I had some left over.
