This recipe is strangely titled "Supper Enchiladas" but has eggs, which made me wary of trying it. However, it was Delicious!! I put it in a 9x13 pan vs. the ramekins, and it worked great. I highly recommend this for a great Mexican flavored dinner with a little spice.

This is fantastic! We didn't have the cream cheese and used red salsa, and it was still very delicious. I'm new to cooking in ramekins and this is my third keeper recipe. Thanks for sharing!
