Sunrise Punch

Sunrise Punch

This beverage works well for a holiday brunch. For another version, substitute Champagne for the ginger ale. You can combine everything but the lime slices and the ginger ale up to two days before the brunch; add the ginger ale immediately before serving so it keeps its fizz.

Cooking Light NOVEMBER 2007

  • Yield: 9 servings (serving size: 1 cup)

  • 2 cups pineapple juice
  • 2 cups cranberry juice cocktail
  • 1/2 cup fresh lime juice (about 4 large limes)
  • 9 lime slices
  • 1 (11.5-ounce) can apricot nectar
  • 2 (12-ounce) cans ginger ale

Combine first 5 ingredients in a large pitcher; cover and chill. Add ginger ale just before serving; stir gently. Serve over ice.
