Sun-Dried Tomato Pesto

We suggest using this zesty mixture as a tasty substitute for pizza sauce.

- 2 (3-oz.) packages sun-dried tomato halves
- 1/2 cup grated Parmesan cheese
- 1/2 cup loosely packed fresh flat-leaf parsley
- 1/2 cup olive oil
- 1/4 cup pine nuts
- 3 garlic cloves
- 3 tablespoons cold water
- 1 tablespoon lemon juice
- Process all ingredients in a food processor until smooth, stopping to scrape down sides as needed.
