Summertime Salmon Cakes

Summertime Salmon Cakes is a quick and simple dish that tastes like you spent all day in the kitchen.

Yield: Serves 2 to 4


  • 2 6-oz. cans salmon, drained
  • 2 eggs
  • 10 saltine crackers, crushed
  • salt and pepper
  • olive oil


  1. Mix first 4 ingredients together; form into patties. Heat both sides in hot oil in a skillet until golden.
