Ingredients
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh lemon or lime juice
- 1 tablespoon Dijon or champagne mustard
- 1 tablespoon honey or sugar
- 1/4 teaspoon dry mustard
- 1/4 teaspoon salt
- 2 cups speckled leaf lettuce
- 2 cups torn Merlot, red sails, or other red leaf lettuce
- 2 cups torn frisée or Bibb
- 2 oranges, peeled and sectioned
- 2 to 4 tablespoons crumbled feta cheese (optional)
Preparation
- Whisk together first 6 ingredients until blended.
- Arrange lettuces on a platter; top with orange sections. Drizzle with dressing; toss to coat. Sprinkle with cheese, if desired.
