Summer Salad

Ingredients

1/3 cup extra-virgin olive oil
1/4 cup fresh lemon or lime juice
1 tablespoon Dijon or champagne mustard
1 tablespoon honey or sugar
1/4 teaspoon dry mustard
1/4 teaspoon salt
2 cups speckled leaf lettuce
2 cups torn Merlot, red sails, or other red leaf lettuce
2 cups torn frisée or Bibb
2 oranges, peeled and sectioned
2 to 4 tablespoons crumbled feta cheese (optional)

Preparation

Whisk together first 6 ingredients until blended.

Arrange lettuces on a platter; top with orange sections. Drizzle with dressing; toss to coat. Sprinkle with cheese, if desired.
