Summer Salad

Local Flavor: Fore Street's Summer Salad

  • 1/3 cup extra-virgin olive oil
  • 1/4 cup fresh lemon or lime juice
  • 1 tablespoon Dijon or champagne mustard
  • 1 tablespoon honey or sugar
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 2 cups speckled leaf lettuce
  • 2 cups torn Merlot, red sails, or other red leaf lettuce
  • 2 cups torn frisée or Bibb
  • 2 oranges, peeled and sectioned
  • 2 to 4 tablespoons crumbled feta cheese (optional)

How to Make It

  1. Whisk together first 6 ingredients until blended.

  2. Arrange lettuces on a platter; top with orange sections. Drizzle with dressing; toss to coat. Sprinkle with cheese, if desired.
