Summer Black Bean and Pasta Salad

    Delicious! It's easy, but does take a bit of chopping. I'll definitely make it again. I served it with the Spicy Honey Brushed Chicken Thighs. My cucumber had gone bad so I added corn to maintain the vegetable content, and it was very tasty. I think you could play around with the veggies a bit.

    Has been a favorite for a few years now! I do add a little extra cilantro because we love it.

    I got good reviews from the gang I served this salad to. I did use corn instead of cucumber and almost doubled the dressing. Good, fresh, summer in a bowl.

    We love this and have made it several times. I like to use whole wheat pasta but have never found whole wheat ditalini, so I usually sub small shells or orzo. I also add feta when serving as a main dish, to make it more rounded and filling. I agree with the other reviewer that corn fits better than cucumber, but obviously that will add starch and calories, if that's a concern.
