We've updated this classic with dried cherries and spinach in place of raisins and lettuce. Apples are key, but make sure you use a crisp snacking variety such as the heart-shaped Gala apple with its yellow-orange skin and red stripes.

How to Make It

Whisk together first 3 ingredients in a large bowl. Stir in apples, celery, and cherries; toss to coat. Cover and chill 30 minutes. Arrange spinach leaves on serving platter; top with chilled apple mixture, and sprinkle evenly with pecans.
