Sue's Blueberry-Banana (or apricot) Scones

  • 1 1/4 cup flour
  • 1/2 cup whole wheat flour
  • 1/4 cup sugar (or maple syrup or brown sugar)
  • 1 teasp baking powder
  • 1/2 teasp baking soda
  • 1/4 cup butter ( or applesauce)
  • 1/2 cup yogert( vanilla, plain or lemon)
  • 1/3 cup mashed banana(I leave out if none available)
  • 1/2 cup blueberries
  • ( or instead apricots)
  • 1/2 cup nuts if you wish


Stir dry ingredients together. cut in butter to fine crumbs. add yogert, bananas and blueberries. stir until moistened

mound on lightly oiled baking sheet. with floured hands, pat or roll mounds into smothe 7 inch round. with sharp floured knife, cut into 8 pieces. coat with oatmeal. Bake 350 degrees for 25 min
