The day before, cube bread to make 30 cups and leave out to dry overnight. In skillet, cook sausage and set aside. In a large pan, melt butter; add onions, celery and seasonings and cook till soft. Add apples and sausage and cook 2 minutes more. Remove from heat. Gently stir in bread cubes. Add bouillon if necessary for desired moistness. (Remember if this is going in the turkey the juices will add moisture.)
